Spinach Salad with Grapes, Gorgonzola Cheese and Almonds
with a Honey Champagne Vinaigrette

Vinaigrette Ingredients

  • ¼ cup honey
  • ¼ cup Champagne vinegar
  • 1 Tbs. granulated garlic
  • 1 Tbs. fresh chopped parsley
  • 1 Tbs. Dijon mustard
  • 1 cup olive oil

Kosher salt & pepper (to taste)

Salad Ingredients

  • 6 ounces baby spinach
  • 1 cup red grapes, sliced in half
  • 1/3 cup sliced almonds
  • 1/3 cup crumbled Gorgonzola cheese
  • Salt and pepper (to taste)

Vinaigrette Directions

Mix all ingredients but oil, slowly whisk in oil until smooth.  Refrigerate

Salad Directions

In a larger bowl, toss the dressing with the spinach and grapes.  Top with the almonds and Gorgonzola cheese, season with salt and pepper to taste.
