The Food4Health gardens at Hartford Hospital have provided more than 200 pounds of fresh produce this season, with a “Plant to Plate” time of just 24 to 48 hours. Recently, vegetables harvested early in the morning were served to patients by evening. One patient, pictured here, enjoyed green beans so much that she took a bag of them home for dinner. Food4Health’s mission is to ensure patients have access to fresh, healthy food, and the rooftop gardens are a key part of this effort.
