Have yourself a very merry cranberry season with our series of good-for-you recipes (this is the last installment):
Cranberry Orange Bread Pudding
Yield: 8 servings
Prep Time: 10 minutes. Cook Time: 45 minutes.
- ½ gallon White Bread Scraps
- 2 cups Dried Cranberries
- 1 cup Chocolate Chips
- 1 qt Whole Milk
- 6 eggs
- ¼ cup Orange Juice Concentrate
- ¼ cup Honey
- 1 tsp Vanilla Extract
1. Apply cooking spray evenly to your desired pan. Arrange bread scraps evenly on the bottom of the dish. Sprinkle cranberries and chocolate chips over bread.
2. Combine wet ingredients in a small bowl and mix thoroughly. Pour wet ingredients over the bread. Allow all scraps to soak up liquid until the bread is soggy.
3. Bake at 350F for 35 minutes or until bread pudding springs back to the touch at the center. Enjoy!
